Clear spirits show you everything. There's no barrel to hide behind and no flavor to cover a rough cut, so a clear spirit either tastes clean or it doesn't. Ours is distilled and cut by hand at our distillery in Sewickley, twenty minutes north of Pittsburgh, and we run it until it's smooth enough to drink on its own.
